Muffins for Egg Challenge (makes 6 muffins):

Ingredients Needed: 

  • 2 cups cake or muffin mix (milk free if your child is milk allergic)
  • 2 medium eggs
  • 3/4 cup of water
  • 2 tablespoons of oil

How to make:  First, beat eggs thoroughly in a medium bowl, then add all other ingredients and mix well (2 minutes).  Pour into 6 large baking cups in a pre-prepared muffin pan, using all of the mixture (makes 6 large muffins).  Baking cups should be completely filled as muffins do not rise well.  Bake at 350 degrees for 30 minutes on the top rack. Remove and cool.

***Do not add any fresh fruit or other ingredients.

***To ensure correct dosage follow directions exactly as listed above.

Muffins for Milk Challenge (makes 6 muffins): 

Ingredients Needed: 

  • 2 cups cake or muffin mix- be sure to use milk free (egg free also if your child is egg allergic)
  • 1/3 cup instant non fat dry milk
  • 3/4 cup of water
  • 2 tablespoons of oil


How to make: Add the instant milk to the water and let dissolve for several minutes, then add all other ingredients and mix well (2 minutes). Pour into 6 large baking cups in a pre-prepared muffin pan, using all of the mixture. Baking cups should be completely filled as muffins do not rise well (makes 6 large muffins). Bake at 350 degrees for 30 minutes on the top rack. Remove and cool.

Delicious and Easy French Toast Recipe:

Ingredients Needed: 

  • 1 egg
  • 1 piece of bread
  • 2 Tbsp of milk (in case of milk allergy substitute with almond, rice, or coconut milk)
  • Optional, 1 tsp sugar or dash of vanilla
  • Non-Stick cooking spray

Coat pan with cooking spray. Combine ingredients, soak into bread and cook each side over medium heat for 3-5 minutes.

  • For peanut challenges, we will provide peanut butter. Sometimes, it may help to bring a snack that the patient already tolerates to mix with the peanut butter (fruit, cookie, etc)
  • If you are concerned your child may not like peanut butter texture, we recommend bringing other snacks with significant peanut content.

Here are some suggestions:

  1. Bamba snacks (available in Trader Joe’s, Walmart, etc) 
  2. Nutter Butter Cookies
     
  3. Reese’s Peanut Butter Cups (at least 2 cups) or Reese’s Pieces (3 oz or at least 75 pieces)
